We are gathered here today to renew our vows. Or rather, I will renew mine to you, though I'm sure at this point you have committed cyber-adultery and left me for another, more faithful blogger.
That's okay, I wont judge. Okay, maybe I will a little. But I am fully ready to accept you back, open-armed.
If you will trust me, that is.
I vow to be more consistent in my posting endeavors, I do.
I aim to post at least once weekly, I do.
I will make no further guarantees, except to say that I love you all, I do.
And I will most certainly partake in enticing you to eat delicious, wholesome food again, I will.
Though I'm sure you all haven't starved without me.
I have been starved without your affection.
Where have I been all this time? Well, I suppose I have good reason for my absence.
I was giving birth to this adorable thing:
Yeah. He's lovely. He's handsome. He's gorgeous. I will accept any flattery on behalf of his cuteness...because it's all true.
Biased much? Ha.
Anyway- I do apologize for not writing, though I've been a bit detained. AND, to be quite honest, I (gasp) haven't been cooking that much. No, no, I haven't been living off boxed, pre-packaged, preservative-laden chemicals and HFCS :) I've had incredible friends and family who have been so generously stocking my deep-freeze for the past 6 weeks and it. has. been. wonderful. Here is what my freezer looks like:
I'm kidding. Mine isn't in any way THAT organized. I borrowed this photo off of Pinterest (which I LOVE, can I get an "amen"?!) from THIS blogger, who has great freezer meals, by the way.
To be real with y'all, I have actually enjoyed taking a little hiatus from daily slaving over the stove and writing about it. However, I have reached a point where I am ready to return.
And I plan to make a triumphant entry.
I have begun to miss my pots, pans, and kitchen utensils. I started small this past weekend making a bit of homemade hummus for a family gathering and guess what? My blender began smoking and decided it was going to meet it's maker (which happens to be Hamilton Beach- an awful brand, if you ask me). Triumphant entry? Not so much...
However right before the blender decided to breathe it's last, it graced me with the most delicious fall drink. This yummy concoction:
A pumpkin pie smoothie.
Yes, sounds a bit strange but think of it as a homemade pumpkin spice frappuccino. Yea. Eat your heart out Starbucks. And I saved $5 making it at home. Bonus!
How's it done? Well let me share.
Pumpkin Pie Smoothie
Ingredients & Instructions:
Puree in blender:
-1 cup your choice milk (I actually like vanilla soy in this case)
-1 medium banana, diced
- 8 oz container greek yogurt (optional- but adds creaminess)*
-1/4 cup canned pumpkin (not pumpkin pie filling)
-3 tsp honey or agave nectar
- 1/2 tsp vanilla extract*
-1 tsp pumpkin pie spice
-1/2 cup ice (or more depending on your desired thickness)
*If you don't have greek yogurt, you can substitute an 8oz container any brand vanilla yogurt but omit the vanilla extract
Once pureed, pour in a glass, top with a dollop or ten of whipped cream with a little more pumpkin pie spice on top and sip through a straw. Mmm. Like I said- you save $5 and can easily make it whenever you like! In fact, I think I will partake in one now (while using a sweet friend's blender, on loan at the moment- ha).
